Fairmont Hotels & Resorts has released a collection of 18 special recipes for the festive season, with each shared by a chef from its portfolio of properties around the world.
Featuring recipes for Christmas alongside options that can be enjoyed year-round, each is guided by the theme of reducing food waste and encouraging conscious cooking.
Dishes include pho ga tay, Vietnamese turkey noodle soup (pictured above), which uses leftover turkey and was created by Michael Pagnacco, executive chef at Fairmont Waterfront, Canada; lobster ravioli, shared by David Viviano, executive chef at Fairmont Orchid, Hawaii, USA; carrot tartare, created by Robert Ash, executive chef at Fairmont Banff Springs, Canada (pictured, top), and shrimp with organic vegetables, mango vinaigrette and pomegranate, created by Jerôme Dardillac, executive chef at Fairmont Copacabana, Brazil.
