Almanac Barcelona has debuted its new plant-based restaurant VIRENS, headed by chef Rodrigo de la Calle of the Michelin-starred El Invernadero in Madrid.

While meat is not completely absent from the menu, the restaurant cuisine is focused on vegetables and all dishes can be adapted to suit vegetarian or vegan diners.

Options on the menu include beetroot tartare with truffle ice cream and an acidified herb salad, creamy spinach and curly kale croquettes, and broccoli green curry, pak choi and field peas.

Almanac Barcelona is a luxury boutique property with 61 rooms and 30 suites.
